Synopsis Traveling North Carlito stops in Ensenada to check out the local restaurant scene, visit the fish market and share tostada's made by the owner of one of Ensenada's oldest and most popular street vendors. Then Carlito goes on a day of adventurous diving for Sea Urchin, afterwhich he visits, Catalina Offshore products, where they clean and process the Sea Urchin. Later, heading out to Baja wine country, Carlito meets up with his friend and restaurateur Magda of Tres' Gallinas Italian Restaurant. Magda makes fresh pasta to go with the myriad of sauces and dishes that Carlito creates with the Sea Urchin he collected. A gathering of friends join Carlito for a feast over-looking the wine vineyards of Valle de Guadelupe.
